We have like for example we have our menu but then if somebody wants to have a grilled chicken breast or a grilled salmon or a vegetarian dish, we have it all so we do it like in the restaurant. We’re not gonna ask the guests, would you like steak or would you like braised short ribs or would you like that, they know what they get but if somebody has any dietary things, we are ready for everything so he have 350 people in the kitchen cooking, so we should be able to do anything they want. |

And then on Saturday or Sunday on Sunday we cook them, so everything is really done at the last moment. We don’t cook anything really in advance because it’s not necessary but we have to get all the food in by Friday to make sure that we have everything in our kitchen, in the refrigerator so that they our cook can start prepping everything so it’s really a mixing of organization because we have like 50 people doing just the orders and the appetizers and things like that and you have your whole group doing the main course and another group doing the salad, so it’s really how we organize everything. |

As I mentioned, each one of these is blended exclusively for the Oscars. Wolfgang Puck is the chef of the evening, and so I worked with Wolfgang to come up with a wine that will pair with his foods. For example we have the golden standard chardonnay this year. He’s working with a lobster salad as well as some smoked salmon, so I’m looking to produce a wine that has a little bit of that nice vanilla, uh rich pear apple character that will lend itself to with the lobster and will also pair beautifully with the smoky toasty character that we get from the oak, and that pairs nicely with his salmon dish. |

The Red Carpet Reserve that Sterling produces this year keeps mind again the Asian theme that Wolfgang is working with and so I’m looking for a blend that produces a wine that’s rich caseese and black cherry. There’s also an underlying Asian spice that goes through this wine that really pairs well with his braised short rib. |

Well we have something very special that we’re doing this year. Um we have reached out to our wine label who has released a very rare magnum of Moet & Chandon. It’s a vintage 1929 and it’s in honor of our new relationship with the Oscars but also the 1929, the first year of the Oscars, so we’ll be auctioning that off for charity. We have it here, there’s only a few of these bottles available in the world. (talks) We don’t know the value. It’s so rare but we’re hoping that it will fetch a large large amount of money so that we can make a great contribution to an entertainment charity. |

Well here we have a part of our Oscar menu of the Governors Ball. Like we have some very traditional things like our smoked salmon Oscars with caviar here. We’re gonna have our mini-kobe burgers. For example black truffle pizza and then Sherry has this desert here, she made a fabulous desert . it’s benta box made out of white chocolate with passion fruit cake, some wonderful sorbets, some raspberry sorbets, we’re gonna have a ? lime sorbet and a coconut de leche sorbet so you can really go to the top of the sorbet and then chocolate truffle. |

Well I think you know we have kobe burgers so they’re most important thing is that they’re really delicious. Pizzas with black truffles is really as good as it can get. Smoked salmon and caviar is not bad either. How much better can you get? And I remember a lot of people prefer our smoked salmon Oscar or our pizza with black truffles than people give them some other fancy stuff, so I think this is really elegant but simple and I think that’s the way we want to go this year you know have a lot of flavor, make it look elegant, but not over the top. |

A lot of guests, 1600 people so we’re gonna smoke 50 sides of salmon. We ordered 1800 pounds of short ribs, we gonna order 900 lobsters so Sherry made how many of these boxes? Sherry – 5000 Oscars, 1500 boxes, 3000 pounds of chocolate. (talks) This year actually the caviar is very low because we just use actually for our chocolate Oscar some years we make baked potato with caviar so we’re just gonna have 5 pounds of caviar. |

We’ve been involved with the Academy for about 20 years and every year we’ve been kind of delegated to make up the specialty cocktail for the Oscars and the last couple of years we’ve been able to make up 2 different cocktails and the cocktails will be served as people come off the red carpet walking up into the Kodak um before the show, during the show, and then afterwards when they go to the Governors Ball. So Wolfgang Puck and Sheryl Gicetto who runs the ball and I sat down every year at Spago and we decide how we’re gonna make a cocktail and Wolfgang brings out some fresh juices so on the Ultimate Vodka side this year we use our vodka which is called Ultimate Vodka which is from Poland which is made from wheat, rye, and potato, and we get some fresh, organic blueberry juice. We get fresh, organic mango juice, put it into a shaker, shake it up, get really cold, and Sherry ? who is the pastry chef designs all the pastries for the Governors Ball. She actually made a silver sugar and we rimmed the glass with silver sugar, strain it, put it into the glass, and then we get some fresh organic blueberries which we just got this morning and that goes into the drink. |

We’re the Patron Spirits Company, the owner is John Paul DiGorio. We started the company, he started the company uh 20 years ago. Ed Brown who is our president and CEO runs the company for us and about 3 years ago we all sat down and said what do we need to increase our portfolio and we decided it had to be vodka. So John McDonald the CFO and Ed Brown and many of us traveled around the world to see if we could find a vodka that fit the Patron profile, and we came up with this great vodka from Poland called Ultimate and its all-natural, made with wheat, rye, and potato. Small little distillery about 3 and a half hours out of Warsaw and we started marketing it last year in the US. We sold out in the first 3 months, and we start rolling it out this summer in Europe. |

Well the thing that kind of starts out is is um we use wheat, rye, and potato where a lot of vodkas use wheat and rye, some use just straight potatoes, so we’ve got the blend of the 3 which gives it the smoothness when you finish it. we use a hydro-selection process which um distills the vodka at a certain proof and then we filter it 4 times. So we have 4 times distillation, 4 times filtration. And then we use this thing, this process called candlelight filtration, so it goes through these filters when candles look at the impurities and we take all the impurities out through this filtration process and then we uh what’s the end result, a smooth clean, and then its made all from natural products. |
